外傭食譜 (中菲印對照) – 香茅黃花魚

香茅黃花魚 – Lemon Grass Yellow Croaker
材料:
500克 黃花魚2段鮮香茅段150克 青椒150克 紅椒50克 洋蔥6片 九層塔50克 酸子羔 

調味料:
200克 茄汁1湯匙 雞粉1/2 茶匙 鹽3湯匙 糖100克 水 

做法:
1.將黃花魚洗淨抹乾水份,用少許鹽搽勻後撲上生粉煎透至熟、備用2.將調味料加入香茅,酸子羔,九層塔煮透即汁水3.燒熱少許油將青、紅椒、洋蔥爆香加入煮好汁水同爆透後,淋上魚面上碟便成

Seasoning:
200g ketchup1tbsp chicken powder1/2 tsp salt3tbsp sugar100g water 

Cooking Method:
1.Rinse the yellow croaker and absorb the water. Slightly slice the surface. Then, brush on with some salt and corn starch. Then, pan-fry until done.2.Mix the seasonings with lemon grass, tamarind paste and Thai sweet basil, then, cook into sauce.3.Heat some oil to sautee bell peppers and spring onion. Then, add in the sauce. Pour onto the fish and ready to serve.

Mga Sangkap:
500 gramo Yellow Croaker2 pirasong sariwang tanglad50gramo berdeng sili50gramo pulang sili50gramo tinadtad na sibuyas6pirasong Thai sweet basil50gramo pasting tamarind 

Panimpla:
200gramo ketsap1kutsarang pulbos ba manok1/2kutsaritang asin3kutsarang asukal100grano tubig 

Paraan ng pagluluto:
1.Hugasan ang yellow coaker at ipasipsip ang tubig. Hiwain ng bahagya abg ibabaw. Tapos, pahiran ng kaunting asin at ari-nang mais.. Tapos, iprito hanggang maluto.2.Ihalo ang panimpla sa tanglad, pasting tamarindat Thai sweet basil, tapos, pakuluin.3.Maginit ng mantika para igisa ang lahat na mga sili at sibuyas. Tapos, idagdag ang sarsa. Ibuhos sa isda at handa ng ihain.

Bahan:
500 gr ikan yellow croaker2batang serai segar50gr paprika hijau50gr paprika merah50gr bawang bombai cincang6lembar kemangi Thailand50gr pasta tamarin (assam paste) 

Bumbu-Bumbu:
200gr saus tomat1sdm chicken powder1/2sdt garam3sdm gula100gr air 

Cara Memasak:
1.Cuci ikan dan serap airnya.Dengan ringan iris pada permukaannya. Kemudian, olesi dengan sedikit garam dan tepung sagu. Kemudian goring hingga matang.2.Campur bumbu-bumbu dengan serai, pasta asam dan kemangi, kemudian masak hingga menjadi saus.3.Panaskan sedikit minyak untuk menu-mis semua paprika dan bawang bombaii. Kemudian, masukkan saus, Tuang diatas ikan dan siap untuk dis-ajikan.
